Chef Omar Powell is a French classically trained culinary artist whose work is grounded in the foundations of Old World European cuisine—most notably French and Italian traditions—while thoughtfully drawing inspiration from the bold, layered flavors of the Caribbean and West Indies. His approach is not about blending cuisines, but about elevating them—applying time-honored technique, discipline, and restraint to ingredients and flavor profiles rooted in the New World.

A graduate of the Culinary Institute of America, Chef Omar brings a refined sensibility to Caribbean cuisine, presenting it in a way that feels intentional, elegant, and globally relevant. His culinary experiences are designed to unfold over the course of an evening, where dishes are paired not only with regionally inspired rum cocktails, but also with carefully selected wines that enhance and reveal the complexity of the cuisine in unexpected ways.

Guided by foundation, precision, and culture, Chef Omar’s work invites guests into a more elevated expression of Caribbean dining—one that honors heritage while confidently claiming its place on the world stage.

After years in the culinary world, I’ve come to understand that this is exactly where my work has led me—back to foundation, back to culture, back to intention. My goal is to elevate Caribbean cuisine so it can be fully represented on the world stage, not by leaving it behind, but by honoring it through technique, refinement, and experience.”

Six of us went there for Dinner, Chef Omar and the team were very welcoming, great service. Soft, classic jazz infiltrates the dining rooms and contributes to the romantic atmosphere. The dishes we tried were pure perfection: we had the tomato bisque, persimmon salad, the beef brisket, and the grilled octopus ...which is out of this world. There’s a nice wine list to choose from so you’ll find the perfect accompaniment to your meal. We will take the grown kids with us next time: they’ll appreciate the sophisticated menu and remarkable flavors.
